Best banana bread: juicy, aromatic and simply irresistible!
Ingredients:

2 ripe bananas

150 g wholemeal spelt flour

100 g ground almonds

80 g maple syrup

70 g coconut oil

1 tbsp apple cider vinegar

3 tbsp cocoa
-
1 tsp cream of tartar baking powder

1 tsp baking soda
-
½ tsp vanilla
-
½ tsp cinnamon
-
1 pinch of cardamom
Preparation:

Melt the coconut oil, add the apple cider vinegar and bananas and mix everything together. Mix the dry ingredients and stir into the dough with the coconut oil mixture and the maple syrup.

Line a loaf pan with baking paper, pour in the dough and spread it evenly.

Bake the banana bread in a preheated oven at 180°C with top and bottom heat for 40 minutes. Test with a toothpick: if nothing sticks to it, the banana bread is ready.
Preparation in Thermomix:

Put the coconut oil, apple cider vinegar and chopped bananas into the mixing bowl and mix for ten seconds on level 4.

Add the dry ingredients and maple syrup and mix for 30 seconds on speed 3.

Line a loaf pan with baking paper and pour in the dough, spreading it evenly.

Bake the banana bread in a preheated oven at 180°C with top and bottom heat for 40 minutes. Test with a toothpick: if nothing sticks to it, the banana bread is ready.
My dosha tip: Suitable for Pitta and Vata. According to Ayurveda, bananas have a nourishing, heavy and cooling quality. For this recipe, the bananas should definitely be ripe. Unripe bananas, on the other hand, are good against diarrhea because they have a dry and astringent quality.
